BEEF RANCHERO ROLLUPS
Prep time: 5 minutes
Cook time: 15 minutes
1 lb. ground beef or turkey
1/2 onion, chopped
1 can (14.5 oz.) S&W® Ready-Cut® Diced Tomatoes with Green Chilies & Spices
1 can (15 oz.) S&W Black Beans or Kidney Beans, drained
6 flour tortilla tortillas, warmed
1-1/2 cups shredded Cheddar cheese
1. Brown meat and onion in large skillet; drain. Season with salt and pepper, if desired.
2. Add undrained tomatoes and beans; cook over medium heat, 5 to 7 minutes, stirring occasionally until liquid is gone.
3. Fill each tortilla with meat mixture, cheese and sliced green onion, if desired; roll up and top with sour cream, avocado and cilantro, if desired.
6 servings
Tip: If you are watching carbs, omit the beans and look for low-carb flour tortillas at your market. You can also add shredded lettuce to replace the beans when filling each tortilla.
