BEET & FETA BRUSCHETTA
Prep time: 20 minutes
1 loaf baguette or French bread, cut into 3/4-inch slices
1 large clove garlic, cut in half lengthwise
Olive oil
4 oz. cream cheese, softened
1 pkg. (4 oz.) crumbled feta cheese
1 can (15 oz.) S&W® Pickled Party Beets, drained
Chopped fresh basil or baby spinach leaves
1. Rub top of each bread slice with garlic. Brush lightly with olive oil.
2. Place bread slices on baking sheet and toast in oven until lightly browned.
3. Mix cream cheese with feta cheese. Spread cheese mixture on bread. Top with beet slice and basil.
